
Endive Salmon Lettuce Wraps

Ingredients
1 can (5 oz.) Blue Harbor Fish Co®. No Salt Added Jumbo Lump Salmon, drained
6- 8 medium pieces Belgium Endive
1 Tbsp. small diced red onion
¼ cup cannellini beans, rinsed and drained
¼ cup diced red pepper
2 tsp. pesto
1 Tbsp. chopped parsley
Preparation
- In a medium bowl gently mix together salmon, onion, cannellini beans, pepper and pesto.
- Place endive pieces on a platter. Fill each with the salmon mixture. Sprinkle with chopped parsley.
