Jalapeno Tuna Quinoa Bowl

This colorful flavor combination is packed with protein and perfect for a quick and easy dinner.


Ingredients

1 pouch (3 oz.) Blue Harbor Fish Co. ® Albacore Tuna with Jalapenos
1 cup cooked quinoa
2 Tbsp. small diced red pepper
2 Tbsp. small diced green pepper
¼ cup black beans
¼ cup corn
1 Tbsp. red onion
½ cup diced mango
½ avocado, diced
Garnish with plantain chips if desired
¼ cup plain Greek yogurt

Preparation

  1. In a small bowl, mix quinoa, peppers, beans, corn, onion and mango.  Gently toss in tuna to combine well.
  2. Top with avocado and serve with plantain chips and yogurt on the side.
