Ingredients:

1 can (4.6 oz) Blue Harbor Fish Co.® Albacore Tuna in Water, drained

1 cup cooked quinoa

2 Tbsp. small diced red pepper

2 Tbsp. small diced green pepper

¼ cup black beans

¼ cup corn

1 Tbsp. red onion

½ cup diced mango

1 Tbsp. chopped fresh jalapenos

½ avocado, diced

¼ cup plain Greek yogurt

2 tsp. lime juice

Serve with plantain chips if desired

Preparation:

  1. In a medium bowl, mix quinoa, peppers, beans, corn, onion, mango and jalapeno. Gently mix in the tuna.
  2. In a small bowl, mix the yogurt and lime juice.
  3. Divide tuna mixture between 2 bowls and top with avocado and drizzle with the yogurt and lime juice.
  4. Serve with plantain chips on the side.
