Ingredients:

1 can (5 oz.) Blue Harbor Fish Co.® No Salt Added Wild Pink Salmon, drained

6 - 8 medium pieces Belgium Endive

1 Tbsp. small diced red onion

¼ cup cannellini beans, rinsed and drained

¼ cup diced red pepper

2 tsp. pesto

1 Tbsp. chopped parsley

Preparation:

  1. In a medium bowl gently mix together salmon, onion, cannellini beans, pepper and pesto.
  2. Place endive pieces on a platter.  Fill each with the salmon mixture.  Sprinkle with chopped parsley.
