Curry Tuna Lettuce Cups
These Curry Tuna Lettuce Cups are a lean, protein-packed machine!
Ingredients:
2 cans (4.6 oz.) Blue Harbor Fish Co.® Wild Albacore Tuna, No Salt Added, drained
3 scallions, sliced thin
2 stalks celery, chopped in small pieces
1 Tbsp. fresh parsley, chopped
3 Tbsp. unsweetened currants, dried
3 Tbsp. slivered almonds
3 tsp. curry powder
½ tsp. salt
½ tsp. pepper
⅓ cup Vegenaise® (or regular mayo)
Juice of ½ a lemon
6-8 Radicchio leaves (About ½ head of radicchio)

Preparation:
- Add the 2 cans of Blue Harbor Fish Co.® Wild Albacore Tuna, No Salt Added to a mixing bowl and gently flake into chunks.
- In no particular order, add remaining ingredients (minus the Radicchio leaves) to the mixing bowl and combine well with the tuna.
- Gently spoon tuna mixture onto each Radicchio leaf.
- Immediately serve and enjoy!
