Cleaned Up Tuna Casserole
Try this Cleaned Up Tuna Casserole for a modern take on a classic recipe!
Ingredients:
3 cans (4.6 oz. each) Blue Harbor Fish Co.® Wild Albacore Tuna, drained
1 Tbsp. butter or oil
1 large shallot or white onion, chopped (about ½ cup)
2 cups frozen organic mixed vegetables (fresh vegetables would be fine too!)
1 tsp. salt
1 tsp. pepper
2 cans (13.66 oz. each) organic coconut milk
1 cup water
1 (12 oz.) bag egg noodles
2 cups sharp cheddar cheese, grated and divided
1 cup panko breadcrumbs or crushed crackers
Handful of dill (optional)

Prep Time: 15 minutes
Cook Time: 55 minutes
Preparation:
- Preheat oven to 350° degrees. In a large cast iron pan (with a lid), melt the butter and sauté the shallot for 2-3 min.
- Add in the frozen vegetables, salt and pepper, and cook for another 2 min on medium heat until thawed.
- Add the coconut milk and water and mix together with the vegetables. Then add the pasta and 1 ½ cups of the shredded cheese.
- Put the pan in the oven (carefully) with the lid on and bake for 30 minutes.
- Remove the pan from the oven (carefully) and gently flake in the large chunks of the Blue Harbor Fish Co.® Wild Albacore Tuna. Stir to combine.
- Sprinkle with remaining cheddar cheese and top with breadcrumbs.
- Place uncovered pan back in the middle of the oven (carefully) for 15-20 minutes until the cheese is melted and the breadcrumbs are golden brown.
- Allow it to sit for about 10 minutes, then serve with some fresh dill.
