Ingredients:

2 cans (4.6 oz. each) Blue Harbor Fish Co.® Wild Albacore Tuna

1 package (1 lb.) spaghetti

4 cloves garlic, sliced thin

2 shallots, sliced thin

1 ½ cups grape tomatoes, whole

¼ olive oil

¼ cup kalamata olives

¼ cup crumbled feta

1 Tbsp. capers

½ tsp. chili flakes

½ tsp. salt

½ tsp. pepper

Zest of 1 lemon

Juice of ½ a lemon

Freshly chopped parsley for garnish

Servings: 4

Prep Time: 15 minutes

Cook Time: 25 minutes


Preparation:

  1. Cook the pasta according to the directions. Once cooked, place into a serving bowl and toss with ½ the olive oil to keep it from sticking together; set aside.
  2. Add the other half of the olive oil to a pan over medium heat. Add shallots and sauté for about 5 minutes. Then, add garlic and let cook for about 2 minutes.
  3. Add tomatoes to your shallot/garlic mixture and let cook for 5-7 minutes, or until they start to blister. Once blistering, use your cooking utensil to pop half of the tomatoes.
  4. In the same pan, add in the lemon zest, kalamata olives, capers, chili flakes, salt, pepper, and lemon juice. Stir together.
  5. Gently flake cans of Blue Harbor Fish Co.® Wild Albacore Tuna into pan, and stir once more.
  6. Add tuna mixture to the serving bowl of cooked pasta and top with feta and fresh parsley to garnish.
  7. Dig in!
