Open-Faced Tuna Melt
A classic with a twist: red bell pepper and jalapeño! This Open-Faced Tuna Melt will easily become your new tuna-craving staple.
Ingredients:
3 cans (4.6 oz. each) Blue Harbor Fish Co.® Wild Albacore Tuna
½ red bell pepper, diced into small cubes
1 jalapeño, seeds removed and diced into small cubes
1 celery stalk, diced into small cubes
3 scallions, chopped
½ cup Vegenaise® (or mayo)
1 Tbsp. capers
½ tsp. salt
¼ tsp. pepper
2 slices of tomato
2 slices of sourdough bread
½ cup cheddar cheese, grated
Fresh dill (for garnish)
Servings: 2
Prep Time: 10 minutes
Cook Time: 5 minutes
Preparation:
- Add everything (except the tomato, bread, cheese, and dill) to a bowl and gently mix together – careful not to break up the beautiful chunks of Blue Harbor Fish Co.® Wild Albacore Tuna.
- Lightly toast the bread, then top with a generous amount (evenly divided) of tuna mixture onto 1 side of each bread slice. Top bread with a tomato slice, then cover with cheddar cheese.
- Broil or toast again until cheese is melted and bubbly. Garnish with fresh dill (optional).
- Devour immediately and satisfy your tuna craving!
