Ingredients:

3 cans (4.6 oz. each) Blue Harbor Fish Co.® Wild Albacore Tuna

½ red bell pepper, diced into small cubes

1 jalapeño, seeds removed and diced into small cubes

1 celery stalk, diced into small cubes

3 scallions, chopped

½ cup Vegenaise® (or mayo)

1 Tbsp. capers

½ tsp. salt

¼ tsp. pepper

2 slices of tomato

2 slices of sourdough bread

½ cup cheddar cheese, grated

Fresh dill (for garnish)

Prep Time: 10 minutes

Cook Time: 5 minutes


Preparation:

  1. Add everything (except the tomato, bread, cheese, and dill) to a bowl and gently mix together – careful not to break up the beautiful chunks of Blue Harbor Fish Co.® Wild Albacore Tuna.
  2. Lightly toast the bread, then top with a generous amount (evenly divided) of tuna mixture onto 1 side of each bread slice. Top bread with a tomato slice, then cover with cheddar cheese.
  3. Broil or toast again until cheese is melted and bubbly. Garnish with fresh dill (optional).
  4. Devour immediately and satisfy your tuna craving!
