Ingredients:

2 cans (5 oz. each) Blue Harbor Fish Co.® Wild Pink Salmon, drained

4 rice paper wraps

1 cup soba noodles, cooked

A few slices of each: red pepper, carrot, purple cabbage, and cucumber (¼ cup of each)

Fresh mint


Peanut Sauce:

½ cup unsweetened creamy peanut butter

¼ - ⅓ cup water or coconut milk

2 Tbsp. soy sauce

2 Tbsp. rice vinegar

1 tsp. sesame oil

¼ tsp. red chili flakes

Servings: 4

Prep Time: 20 minutes

Cook Time: 5 minutes


Preparation:

  1. Make the peanut sauce: blend all of the ingredients for the peanut sauce in a food processor until smooth and combined. Set aside.
  2. Add hot water to a shallow dish or rimmed baking sheet. Gently submerge one rice paper wrap under the hot water. After 15 – 30 seconds it should soften. Once softened, gently remove it from the water and lay it flat on a cutting board.
  3. Lay a few chunks of Blue Harbor Fish Co.® Wild Pink Salmon down the middle of the softened rice paper wrap. Top it with a few strips of red pepper, carrot, purple cabbage, and cucumber, leaving about an inch at the top and bottom of the wrap uncovered. Add a small handful of the soba noodles, and finish with a sprinkle of mint.
  4. To roll the wrap, fold the top over, tuck in the sides, then tightly roll until you’ve created a perfect little summer roll!
  5. Repeat this process 3 more times.
  6. Dunk the summer rolls in peanut sauce and enjoy!
