Southwest Salmon Cakes
These Southwest Salmon Cakes are a showstopper & perfect way to enjoy a different take on your regular protein!
Ingredients:
4 cans (5 oz. each) Blue Harbor Fish Co.® Wild Pink Salmon, drained
4 scallions, sliced
⅓ cup black beans, drained
⅓ cup corn, drained
1 cup bread crumbs
⅓ cup mayo
1 tsp. paprika
½ tsp. garlic powder
½ tsp. onion powder
2 Tbsp. olive oil (for cooking)
1 egg, beaten
Pea shoots or microgreens (for optional garnish)
Ingredients for Chipotle Aioli:
½ cup Vegenaise®
½ tsp. salt
½ tsp. pepper
2-3 chipotle peppers
Juice of 1 lemon

Prep Time: 20 minutes
Cook Time: 25 minutes
Preparation:
- Preheat oven to 375° degrees. While the oven is heating, use a mixing bowl to gently combine all ingredients (minus the olive oil) together.
- Using a large spoon (or ice cream scoop), create 6-8 balls with the salmon mixture.
- Ensure the balls of salmon mixture are tightly formed and stick together.
- Add the 2 tablespoons of olive oil to a pan over medium-high heat. After the oil has heated up, add 3-4 balls of salmon mixture to the pan and press down with the back of a spatula. Brown them for 2-3 minutes on each side.
- Transfer the crispy, browned salmon cakes to a baking sheet with a cooling rack on it – this keeps them from getting soggy.
- Once all the salmon cakes have been browned on each side, transfer to the preheated oven for 15-20 minutes.
- While salmon cakes are in the oven, prepare the chipotle aioli. In a small food processor, combine Vegenaise®, salt, pepper, chipotle peppers, and lemon juice. Blitz for about 1 minute.
- After salmon cakes are done baking, carefully remove from oven, and plate with chipotle aioli and garnish (optional). Enjoy!
