Tuna Poke Bowl
This Tuna Poke Bowl is delicious and super easy to make. Make this colorful and tasty poke bowl for your next meal!
Ingredients:
1 can (4.6 oz.) Blue Harbor Fish Co.® Wild Albacore Tuna, drained
2 Tbsp. Vegenaise® or mayonnaise
2 tsp. gochujang red pepper sauce
1 tsp. soy sauce
1 cup sushi rice, cooked and cooled
1 cup red cabbage, shredded
1 Persian cucumber, thinly sliced
½ small mango, cubed (about 1 cup)
Optional garnishes: jalapeño slices, cilantro, pickled red onions
Optional: seaweed to eat with
Pickled Red Onions:
1 red onion, thinly sliced
2 cups apple cider vinegar
2 cups water
1 tsp. salt

Preparation:
- Prep the pickled red onions: place the red onion slices in a bowl and cover them with apple cider vinegar. Let them sit while you prep everything else. Place extra red onion in a large mason jar and put them in the fridge to store.
- Place the Blue Harbor Fish Co.® Wild Albacore Tuna in a small mixing bowl. Add in the Vegenaise®, gochujang paste, and soy sauce and mix together gently.
- Place the cooked sushi rice in the center of a serving bowl of your choice. Add in the tuna mixture, cabbage, cucumber, and mango decoratively on top of the rice.
- Garnish with jalapeño slices, cilantro, and pickled red onions.
- Enjoy!
