Ingredients:

1 can (4.6 oz.) Blue Harbor Fish Co.® Wild Albacore Tuna, drained

2 Tbsp. Vegenaise® or mayonnaise

2 tsp. gochujang red pepper sauce

1 tsp. soy sauce

1 cup sushi rice, cooked and cooled

1 cup red cabbage, shredded

1 Persian cucumber, thinly sliced

½ small mango, cubed (about 1 cup)

Optional garnishes: jalapeño slices, cilantro, pickled red onions

Optional: seaweed to eat with


Pickled Red Onions:

1 red onion, thinly sliced

2 cups apple cider vinegar

2 cups water

1 tsp. salt

Preparation:

  1. Prep the pickled red onions: place the red onion slices in a bowl and cover them with apple cider vinegar. Let them sit while you prep everything else. Place extra red onion in a large mason jar and put them in the fridge to store.
  2. Place the Blue Harbor Fish Co.® Wild Albacore Tuna in a small mixing bowl. Add in the Vegenaise®, gochujang paste, and soy sauce and mix together gently.
  3. Place the cooked sushi rice in the center of a serving bowl of your choice. Add in the tuna mixture, cabbage, cucumber, and mango decoratively on top of the rice.
  4. Garnish with jalapeño slices, cilantro, and pickled red onions.
  5. Enjoy!
