Ingredients:

1 can (4.6 oz.) Blue Harbor Fish Co.® Wild Albacore Tuna, No Salt Added, drained

4 (6 inch.) cassava tortillas

2 cups organic Colby Jack cheese, shredded

4 scallions, sliced diagonally

1 jalapeño, thinly sliced

Non-stick avocado oil spray

Greek yogurt & salsa of your choice for dipping

Servings: 2

Prep Time: 15 minutes

Cook Time: 15 minutes (to make 2 quesadillas)


Preparation:

  1. Heat a non-stick pan over medium-high heat and add avocado oil spray to the pan.
  2. In the pan, lay down a tortilla and ½ cup of the shredded cheese.
  3. Add ½ a can of the Blue Harbor Fish Co.® Wild Albacore Tuna, No Salt Added to the tortilla, then add a handful of scallions and jalapeño slices. Top with another ½ cup of shredded cheese and another tortilla.
  4. After 3-4 minutes, the cheese should be melty and the bottom tortilla should have a golden color. Flip the quesadilla over in the pan and let cook for an additional few minutes.
  5. Repeat the process once more with the remaining 2 tortillas.
  6. Serve sliced in quarters with some Greek yogurt and salsa. Enjoy!
