Tuna Sandwich Pasta Salad
A tuna salad sandwich, but better. Dive into deliciousness with a hearty bowl of Tuna Sandwich Pasta Salad!
Ingredients:
3 cans (4.6 oz.) Blue Harbor Fish Co.® Wild Albacore Tuna, drained
8 oz. gluten-free fusilli noodles
¼ red onion, cut paper-thin
¼ cup apple cider vinegar
3.5 oz. jar of capers, drained
½ tsp. salt
½ tsp. of pepper
1 cup Vegenaise® (or mayo)
1 Tbsp. Dijon mustard
½ tsp. chili flakes (optional)
4 stalks of celery hearts, sliced diagonally thin
¼ cup fresh dill, chopped
Celery leaves (optional)
Servings: 4
Prep Time: 15 minutes
Cook Time: 10 minutes
Preparation:
- Cook the pasta according to the directions. Let it cool once cooked. If you don’t have time to cool pasta completely, run under cold water to cool quickly.
- Place the red onions and apple cider vinegar in a small bowl and let it sit to pickle while you prepare everything else.
- Mix the cooled pasta, capers, salt, pepper, Vegenaise®, Dijon mustard, chili flakes and pickled onions in a large bowl. Combine well, making sure to coat each pasta noodle evenly.
- Add in celery and dill to the pasta mixture and combine again.
- Using a fork, gently remove the tuna from each can of Blue Harbor Fish Co.® Wild Albacore Tuna and add to the pasta mixture.
- Garnish with celery leaves and additional dill if desired.
- Serve and enjoy!
